If you’re planning a trip to Ibiza and want to go beyond the typical tourist experience, there’s one dish you simply can’t miss: bullit de peix, the island’s most traditional and authentic seafood recipe. Often compared to the famous paella, this local specialty offers a completely different way of understanding Mediterranean cuisine.


What is Bullit de Peix?


Bullit de peix (which literally means “boiled fish”) is a humble fisherman’s dish that was born from simplicity. Fresh local fish — such as grouper, monkfish or scorpionfish — is slowly cooked with potatoes, garlic, saffron and a rich broth.
But what makes it truly special is that it’s served in two parts:


First, the fish and potatoes are presented with a flavorful allioli sauce.


Then, using the same broth, a rice dish (arroz a banda) is prepared and served as a second course.

Bullit de Peix vs Paella


While both dishes are icons of Spanish gastronomy, they are very different in concept and experience:
Paella is all about the rice. It’s cooked in a wide pan, often mixed with seafood, meat or vegetables, and served as a single dish.
Bullit de peix focuses first on the quality of the fish, with the rice coming later as a second act.


In terms of flavor, paella tends to be more intense and varied, while bullit de peix is deeper, more delicate and more authentic to the sea, as it uses the same broth to build layers of taste.


You could say paella is a celebration, but bullit de peix is a tradition.

A final tip


Bullit de peix is usually prepared for a minimum of 2 people and takes time, so it’s always a good idea to book in advance, especially during the summer months.
